We enjoyed seeing our customers today at the farm. Enjoyed meeting a new family who brought their children to visit the farm. A beautiful day for running around to see the pigs, playing with the dog and swinging from the tree on the swing. We love it when children come to visit the farm. Also enjoyed catching up with one of our long time customers by sharing breakfast recipes and stories about our children.
Some said it is still too warm for soups but I couldn't wait any longer. We have taco soup in the crock pot today to enjoy while watching the Auburn game tonight. Our children may be in Auburn and not with us this weekend but Meredith also enjoys the home made taco seasoning when she makes taco with the farm ground beef for her and Martin. The children may not be on the farm but they can still enjoy the recipes from the farm in Auburn. War Eagle!!
Vaughan will get some of the pigs ready to to sell this afternoon while I work on the household Saturday chores. The farm is very dry and hope for some rain soon but it's always a good day on the farm.
Christa's Taco Soup Recipe
(it seems to change according to what I have in the cabinet and refrigerator)
1 lb. Red Hill Farms Ground Beef
Homemade Taco Seasoning (See below)
1 (16oz) can red beans with liquid
1 (15oz) can kidney beans with liquid
1 (15oz) can whole kernel corn with liquid
1 (8oz) can tomato sauce
2 cups water
2 (14.5oz) cans peeled and Fire Roasted diced tomatoes
1 package Ranch Seasoning
This time I added 3 pieces of meatloaf leftover from dinner earlier in the week (warmed in a skillet then added to the mixture)
Brown ground beef. Add 3 tbs of Homemade Taco Seasoning and 2/3 cup water and simmer.
Add beef mixture and additional ingredients to the crock pot. Cook on medium to high for about 4-6 hours.
Serve with cheese, sour cream and soup or crackers.
Homemade Taco Seasoning
1/4 C. plus 1 Tbsp. Chili Powder
1 1/4 tsp. Garlic Powder
1 1/4 tsp. Onion Powder
1 1/4 tsp. Crushed Red Pepper Flakes
1 1/4 tsp. Dried Oregano
2 1/2 tsp. Paprika
2 Tbsp. plus 1 1/2 tsp. Ground Cumin
1 Tbsp. plus 2 tsp. Sea Salt
1 Tbsp. plus 2 tsp. Black Pepper (optional)
Mix all the spices together and save in an air tight container. Use 2-3 tbs. for each pound of ground beef or use to season your favorite tacos, burritos or soups.
